Russian potato pancakes (healthy version)

Russian Potato Pancakes – Derynu 


4 large sweet potatoes
1 yellow onion
1 egg white, beaten
1 salt free seasoning M.Dash 
2 tablespoons oat bran 
ground black pepper to taste
Herbs ( parsley, dill, cilantro) 
Pam Spray 


Finely grate potatoes with onion into a large bowl. Drain off any excess liquid.
Mix in an egg white, herbs, seasoning, and oat bran. 
Spray with Pam Spray a heavy skillet over medium high heat. Drop two or three 1/4 cup mounds into the skillet and flatten to make 1/2 inch thick pancakes. Fry, turning once, until golden brown. Transfer to a oven safe dish. Repeat until all potato mixture is used. Put cooked pancakes in covered oven safe to oven for 5-10 min.
