Yummy Yams & Coconut Pancakes
4 oz yam potatoes
1 egg white, beaten
1 tablespoons oat bran
1 spoon coconut flakes
Finely grate potatoes into a large bowl. Drain off any excess liquid.
Mix in an egg white, stevia, cinnamon, coconut and oat bran.
Spray with Pam Spray a heavy skillet over medium high heat. Drop two or three
1/4 cup mounds into the skillet and flatten to make 1/2 inch thick pancakes. Fry, turning once, until golden brown. Transfer to a oven safe dish. Repeat until all potato mixture is used. Put cooked pancakes in covered oven safe to oven for 5-10 min.
